Bartender at the Fairmont Hamilton Princess

My passion, creativity and love of my craft has been so rewarding over the last 30 years, I need to pinch myself to make sure that I’m not just dreaming.


I have been with the Fairmont for 24 years tending bar at the Southampton Fairmont, The Waterlot Inn and now the Hamilton Fairmont. What keeps me going are the guests I have had the pleasure of meeting over the years. I have been involved in a number of mix logy contests and have won many of them. Just recently I was awarded the 2008 VIP award for the Bartender of the Year. That just shows me that I’m not ready to be set out to pasture yet. I think that you just get better with age. Just like a great bottle of wine.

New Ocean Breeze:

Serve in a Martini glass
1 oz. Parrot Bay rum
¼ oz. Galliano
¼ oz. Hipnotic 4 oz.
white cranberry juice
garnish w/ strawberry & lime wedge

Princess Roydell:
Serve in a Martini glass
1 ¼ oz. Bacardi Dragon Berry rum
¼ oz. Galliano
¼ oz. Banana liqueur
4 oz. white cranberry juice
splash of lemon juice
drop of Grenadine
garnish w/ strawberry, orange wedge & cherry
Shoby Dooby Blue:
Serve in Martini glass
¼ oz. Bacardi Dragon Berry rum
¼ oz. Banana liqueur
¼ oz. Galliano
¼ oz. Blue curacao
3 oz. white cranberry juice
splash of lemon juice
garnish w/ strawberry,
 lime & cherry
New Bermuda Cooler:
Serve in rocks glass over ice
1 ¼ oz. Parrot Bay rum
¼ oz. Midori
2 oz. Gosling’s Ginger Beer
splash of pineapple juice
garnish w/ cherry & orange wedge
